Harvest’s in. Our golden elixir begins with tart, crisp Hudson Valley apples, handpicked at their juiciest as autumn arrives. Pressed into cider and slowly fermented, the vinegar is then aged in New York State white oak barrels to develop a round, mellow acidity. Barrel Aged Maple Vinegar
A study in contrast and complement, our Barrel Aged Maple Vinegar is fermented from Hudson Valley apples and pure New York State Grade A maple syrup. Aged for over six months in new toasted oak barrels, it’s raw, unfiltered, and alive “with mother.” Sweet meets sour in perfect harmony, yielding a complex vinegar with oaky depth and gentle maple warmth.
